Pastrami Cottage Pie
Another great recipe on the Yoder Smokers YS640S from our friend Misty Banchero: “This is the best cottage pie I’ve ever had in my whole life, I mean it. Between the swiss cheese, crumbs, and parsley, all those toppings give it the perfect texture and flavor. So go ahead and give this a try. INGREDIENTS
- 1 lb mashed potatoes (make them slightly more firm than usual so they will pipe easier)
 - 3 tbsp Irish butter
 - 1 c small diced onion
 - 2 tsp Worcestershire sauce
 - 2 tsp ketchup
 - 1 1/2 c broth (I used chicken, I have used beef also)
 - 2 tbsp fresh chopped parsley
 - 1/4 tsp dry thyme
 - 2.5-3c chopped pastrami
 - 1/2c celery
 - 1/2 c carrots (I used rainbow)
 - salt & pepper
 - TOPPINGS: fresh grated Swiss, rye bread crumbs & fresh parsley
 
INSTRUCTIONS
- Sauté onions with butter.
 - Add Worcestershire sauce, ketchup, parsley & thyme.
 - Simmer till thickened slightly.
 - Add pastrami.
 - Shred carrots and celery in food processor then add to the pan.
 - Salt and pepper, taste it and adjust as necessary.
 - Pour into a seasoned cast iron pan.
 - Pipe the potatoes on top.
 - Add some shredded Swiss cheese and bread crumbs.
 - Put in the smoker or oven uncovered at 350°f for about 30 minutes.
 - Let it rest 10 minutes, then serve and enjoy!
